Sweet and Spicy Fried Sweet Potato with Pork topcook.tomathouse.com
Ingredients:
- 1 large sweet potato, cut into 1cm cubes.
- 2 tsp rapeseed oil (canola)
- 450 g of cooked meat
- 2 teaspoons fennel seeds
- 1 teaspoon crushed red pepper flakes
- A pinch of ground black pepper
- 4 cloves garlic, crushed
- 1 small onion, chopped
- 0.5 tsp coarse sea salt
- 4 eggs
Preparation:
- Bring a medium saucepan of water to a boil. Add the sweet potatoes and cook until tender, about 10 minutes. Then drain and set aside.
- Heat oil in a large nonstick skillet over high heat. Add the pork and cook, stirring occasionally, until no longer pink, about 5 minutes.
- Reduce heat to medium, add fennel seeds, red and black peppercorns, and stir for 1 minute. Add the garlic and onion to the pan, stirring constantly, and cook until the onion is translucent, about 5 minutes. Add the sweet potato and season with salt to taste. Cook until the sweet potato and meat are browned.
- Heat a large nonstick skillet over medium heat. Fry the eggs sunny-side up for 3-4 minutes. Cover the skillet and remove from the heat to warm through the yolk, but not quite set (it should still be soft and runny), for 1 minute.
- Divide the sweet potatoes among four plates and top each serving with a fried egg.
