Candied orange peel

Ingredients:

  • 3 oranges
  • 2 tbsp. sugar

Preparation:

  1. Carefully remove the orange zest, being careful not to cut into the white pith, then cut the zest into 0.5cm wide strips.
  2. In a saucepan, pour 1 cup of cold water over the zest, bring to a boil, and simmer for 7 minutes. Drain and set aside.
  3. Combine 1 cup of sugar with 1 cup of water in a saucepan. Heat, stirring, until the sugar dissolves and the syrup comes to a boil. Add the zest, reduce the heat, and simmer, swirling the saucepan occasionally, for 20 minutes. Transfer the candied fruit to a wire rack to cool for 10 minutes.
  4. Sprinkle the remaining 1 cup of sugar onto a baking sheet. Add the candied fruit and roll in the sugar to coat. Place on a parchment-lined baking sheet for about 30 minutes.
