Couscous with strawberries for breakfast topcook.tomathouse.com
Ingredients:
- 3/4 cup almond milk + more as needed
- 0.5 cups whole grain couscous
- 1 tsp maple syrup + more as needed
- 1/4 tsp ground cinnamon + more as needed
- 2 tbsp pecans
- 4 strawberries, thinly sliced
- 2 tbsp. Greek yogurt, 2% fat
Preparation:
- Pour the milk into a small saucepan and bring to a boil over high heat. Remove from the heat and add the couscous, maple syrup, and cinnamon. Stir. Cover the saucepan and let sit for 10 minutes. Gently fluff with a fork.
- When ready to serve, top with strawberries and sprinkle with nuts. Serve with 1 tablespoon of yogurt, if using, a splash of almond milk, cinnamon, and maple syrup.
