Ingredients:
- 900 g ribeye steak, diced
- 2 tablespoons salted butter, melted, + 2 tablespoons for sauce
- 1 tbsp steak seasoning
- 2 tsp chopped fresh rosemary
- 2 cloves garlic, crushed
- 1 cup heavy cream
- 1/4 cup crumbled blue cheese
- 2 tbsp. prepared horseradish
- 2 tbsp chopped chives
Preparation:
- Heat a heavy-bottomed skillet over medium heat. Combine the steak, melted butter, and steak seasoning in a bowl. Add to the skillet and cook until browned on all sides, about 4-5 minutes. Transfer the steak pieces to a plate and let rest. Return the skillet to the heat.
- Reduce heat to medium and add the remaining 2 tablespoons of butter to the pan. Add rosemary, garlic, and a pinch of salt. Cook for 1 minute, until the garlic is heated through. Add the cream and bring to a simmer. Reduce heat to low, then add the blue cheese, horseradish, 1 tablespoon of chives, and black pepper to taste. Transfer the sauce to a serving bowl.
- Place the steak pieces on a platter, arrange toothpicks nearby, and set a bowl of sauce on top. Sprinkle with the remaining chives before serving.
