Whole grain bread in a bread machine topcook.tomathouse.com
Ingredients:
- 1 and 2/3 cups + 2 tablespoons warm water (about 25°C)
- 2 tablespoons of vegetable oil
- 1/4 cup brown sugar
- 1/4 cup dry skim milk
- 2 teaspoons coarse salt
- 3 cups (340 g) whole wheat flour
- 1.5 cups (170 g) bread flour
- 1 packet (7 g) of fast-acting yeast
- Special equipment: bread maker for baking weighing 900 g.
Preparation:
- Place the dough ingredients into the bread machine's baking pan in the following order: water, butter, brown sugar, powdered milk, coarse salt, whole-wheat flour, bread flour, and yeast. Set the machine to bake a 900g loaf of whole-wheat bread (or just the dough, depending on your machine model) and start the cycle (see Note).
- Once the cycle is complete, immediately remove the bread from the pan and let it cool completely on a wire rack.

Settings, cycles, and cooking times may vary depending on your bread maker model. Always follow the manufacturer's instructions. This recipe was tested on a Cuisinart CBK-110 automatic bread maker.
