Ingredients:
- 1/4 cup unsalted butter, plus extra for greasing the pan
- 450 g of pasta horns
- 1/4 cup flour
- 2 cups whole milk
- 0.5 cup heavy cream + more if needed
- 110 g of cream cheese
- 450 g sharp cheddar, grated
- 1 1/2 cups extra sharp cheddar, cut into 1cm cubes
- 1 teaspoon granulated garlic
- 2 large eggs
- 0.5 cup sour cream
Preparation:
- Preheat oven to 175°C. Grease a 22x32 cm baking dish with butter.
- Bring a large saucepan of salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 7 minutes. Drain the pasta in a colander, rinse with cold water, and set aside.
- In the same pan you cooked the pasta in, melt 1/4 cup of butter over medium heat. Add the flour and stir until smooth. Stirring constantly, slowly pour in the milk, then the cream. Bring to a boil, add the cream cheese and grated cheddar, setting aside 1/2 cup, and stir until melted.
- Add garlic, 0.5 teaspoon salt, and 1/4 teaspoon black pepper. Remove the cheese sauce from the heat and add the pasta. Season with salt and pepper to taste.
- In a small bowl, whisk together the eggs and sour cream, then add to the macaroni and cheese.
- Pour the mixture into the prepared baking dish, top with diced cheddar, and sprinkle with the remaining 1/2 cup grated cheddar. Bake until the top begins to brown, about 20 minutes. Cover tightly with foil and bake for another 10-15 minutes.
