American Pecan Pie

topcook.tomathouse.com

Ingredients:

  • 1 sheet chilled pie dough
  • 1 tbsp. premium flour + extra for dusting
  • 1 cup brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 cups pecan halves (1 cup chopped and 1 cup left whole)
  • 110 g melted unsalted butter
  • 2 tbsp. whole milk
  • 1.5 tsp vanilla extract
  • Vanilla ice cream or whipped cream for serving

Preparation:

  1. Preheat oven to 160°C. On a lightly floured work surface, roll out the dough into a 30cm circle. Place the dough in a 23cm pie pan; turn the overhanging edges in and crimp them.
  2. In a large bowl, whisk together the brown sugar, granulated sugar, and eggs until creamy. Add the chopped nuts, melted butter, milk, flour, and vanilla extract and mix well. Pour the filling into the pie crust. Arrange the nut halves in a circle around the top of the pie.
  3. Bake the pie for approximately 55 minutes. Check for doneness by gently shaking the pan: the pie should be firm and have a slight jiggle in the center. Cool on a wire rack for approximately 2 hours. Serve with ice cream or whipped cream.
