Oatmeal cookies with nuts and dried fruits topcook.tomathouse.com
Ingredients:
- 330 g (1.5 cups) butter
- 2 cups brown sugar
- 1.5 cups granulated sugar
- 2 tsp vanilla extract
- 4 whole eggs
- 4 cups premium flour
- 4 teaspoons of baking soda
- 1 teaspoon of salt
- 3 cups granola
- 1 cup quick-cooking oats
- 1.5 cups dried apricots
- 1 cup dried cherries
- 1 tbsp. chopped pecans
- 0.5 cup golden raisins
Preparation:
- Preheat oven to 190°C.
- Beat the butter and sugar. Add vanilla and eggs. Then add flour, baking soda, and salt. Stir in the granola and oats. Add dried apricots, cherries, pecans, and raisins.
- Using a cookie scoop or two tablespoons, drop the batter onto the baking sheet and bake for 12–14 minutes. Let cool on a wire rack.
