Blueberry Chia Seed Smoothie

Ingredients:

  • 2 tablespoons chia seeds
  • 1.5 cups almond milk
  • 1 cup blueberries
  • 1 tsp vanilla extract
  • 1 tbsp coconut paste or coconut flakes
  • A pinch of cinnamon
  • Honey

Preparation:

  1. Place chia seeds in a cup or jar, add 0.5 cups of almond milk, and mix thoroughly. Set the mixture aside for 10 minutes or refrigerate overnight or for up to 4 days.
  2. Transfer the mixture to a blender. Add the blueberries, vanilla, coconut oil, and cinnamon and blend until smooth, adding honey to taste.
