Spicy chicken skewers with grapes

Ingredients:

  • 2 tbsp. l. olive oil
  • 0.5 tsp lemon zest
  • 1 tbsp lemon juice
  • 2 cloves garlic, crushed
  • 1 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.5 tsp salt
  • 450 g boneless, skinless chicken breast, cut into 2 cm cubes.
  • 8 skewers, 25 cm each.
  • 1.5 cups seedless white grapes
  • 2 tablespoons chopped fresh mint leaves
  • 1 lemon, cut into wedges

Preparation:

  1. In a medium bowl, combine the oil, lemon zest, lemon juice, garlic, cumin, coriander, and salt. Add the chicken to the marinade and toss to coat. Marinate the chicken for 20 minutes. While the chicken marinates, soak the skewers in water if they are wooden.
  2. Thread 4 chicken pieces and 4 grapes onto skewers, alternating them. Spray a grill pan with cooking spray and heat over medium-high heat, or light an outdoor grill.
  3. Grill the chicken until cooked through, about 3-4 minutes per side. Sprinkle with mint and serve with lemon wedges.
