Sweet and spicy pickled cucumbers

Ingredients:

  • 2 greenhouse cucumbers, thinly sliced
  • 2 fresh hot red chili peppers, thinly sliced
  • 2 large handfuls of fresh mint leaves
  • 2 tbsp. rice vinegar
  • 4 teaspoons of sugar
  • Salt and freshly ground black pepper

Preparation:

  1. Combine cucumbers, chili, and mint in a bowl. Pour in vinegar, sprinkle with sugar, salt, and pepper. Stir until the cucumbers are well coated.
  2. Refrigerate overnight; the cucumbers will soften as they marinate and the flavor will intensify.
