Ingredients:
Filling
- 5 small peaches, sliced 1/4 inch thick (about 5 cups)
- 3/4 cup sugar
- 0.5 tsp ground cinnamon
- 1/4 teaspoon salt
- 2 tsp freshly squeezed lemon juice
Dough
- 55 g butter
- 3/4 cup premium flour
- 3/4 cup sugar
- 1.5 tsp baking powder
- 1/4 teaspoon salt
- 0.5 tsp natural vanilla extract
- 3/4 cup milk at room temperature
Preparation:
- Filling:
Place the peaches, sugar, cinnamon, salt, and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar dissolves and the peach juice begins to simmer. Reduce the heat and continue cooking for 5 minutes. Remove from heat.
- Place the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 175°C.
- Dough:
In a medium bowl, combine the flour, sugar, baking powder, and salt. In a liquid measuring cup, combine the vanilla and milk. Slowly pour the liquid ingredients into the dry ingredients and mix until smooth.
- Remove the baking dish from the oven and spread the batter in an even layer over the melted butter. Arrange the peaches and their juices evenly over the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35-45 minutes. Let cool to room temperature and serve.
