Strawberry and cucumber Margarita topcook.tomathouse.com
Ingredients:
- 1 and 1/4 cups sugar
- 1/4 cup coarse salt
- 0.5 cups of Reposado tequila
- A splash of orange liqueur, such as triple sec
- 12 strawberries, hulled and quartered, plus 4 whole strawberries for garnish
- Half a cucumber, peeled, seeded and diced, plus 8 slices for garnish
- 2 cups of ice
- 1 lime, cut into 4 pieces
Preparation:
- In a small saucepan, combine 1 cup of sugar with 1 cup of water and bring to a boil over medium-high heat. Stir until the sugar dissolves. Remove from heat and let the syrup cool to room temperature.
- In a shallow bowl, combine the remaining 1/4 cup sugar and salt. Set aside. In a blender, combine 3/4 cup simple syrup, tequila, orange liqueur, quartered strawberries, cucumber, and ice. Blend until smooth.
- Wet the rim of a margarita glass with a lime wedge. Dip the wetted rim into a bowl of sugar and salt. Pour the margarita into the prepared glass. Cut a berry at the pointed end and place it on the rim of the glass. Place two cucumber slices in the glass. Repeat with the remaining three margaritas.
