Ingredients:
Sandwich
- 2 slices sourdough bread
- 2 tablespoons mayonnaise
- 1 tbsp. cheese spread with jalapeño and pimento
Jalapeño Pimento Cheese Spread
- 110 g softened cream cheese
- 0.5 cup mayonnaise
- 2 tablespoons adobo sauce from a jar of chipotle peppers
- 1 tbsp Dijon mustard
- 0.5 tsp freshly ground black pepper
- A pinch of cayenne pepper or a little hot sauce
- A pinch of coarse salt
- 2 cups grated sharp cheddar
- 2 tbsp. grated smoked gouda
- 110 g chopped pimento pepper
- 1/2 cup pickled jalapeño rings, finely chopped
- 2 tsp chopped fresh dill
- Crackers for serving
- 1 cup Castelvetrano olives, for serving
Preparation:
- Heat a nonstick skillet over medium heat. Spread 1 tablespoon of mayonnaise on each slice of bread. Place one slice of bread, mayonnaise side down, in the skillet. Top with the jalapeño-pimento cheese spread.
- Place the second slice of bread, mayonnaise side up, on top of the cheese. Press the pieces together with a spatula and fry until golden brown, about 2 minutes per side. Slice and serve as an appetizer with crackers and olives.
Jalapeño Pimento Cheese Spread: Combine the cream cheese, mayonnaise, adobo sauce, Dijon mustard, black pepper, cayenne pepper or hot sauce, and salt in the bowl of a food processor. Blend until smooth. Add most of the Cheddar and Gouda, reserving about 2 tablespoons of each, and blend again until smooth. Add the mixture to the remaining cheese and fold with a spatula. Stir in the pimento, jalapeño, and dill, and refrigerate before serving.
