Derby sandwich

Ingredients:

    Sandwich

  • 9 slices of bread, 0.5 cm thick.
  • 8 tomato slices
  • 900 g thinly sliced ​​deli turkey
  • 8 slices bacon, cut into strips

    Mornay sauce

  • 2 tablespoons butter
  • 4 tbsp flour
  • 1.5 - 2 cups of milk
  • 0.5 cups grated Gruyere
  • 1/8 tsp. grated nutmeg

Preparation:

  1. In a large skillet, fry the bacon until crispy. Be sure to reserve 2 tablespoons of the rendered bacon fat. Drain the bacon on a paper towel-lined plate.
  2. Add the butter to the same pan and place over medium heat. Add the flour and stir until smooth, 2-3 minutes. Slowly whisk in the milk until smooth. Add the Gruyere and nutmeg and simmer until the sauce thickens, 5-7 minutes. Season with salt and pepper to taste.
  3. Place 2 tomato slices on 4 slices of toast, top with a quarter of the turkey, and top with the remaining slices of toast. Drizzle with Mornay sauce. Top with bacon and chopped parsley.
