Delicate chocolate pudding

Ingredients:

  • 2/3 cup sugar
  • 1/3 cup cocoa powder
  • 3 tablespoons cornstarch
  • 1/4 teaspoon fine sea salt
  • 1 and 1/4 cups whole milk
  • 3/4 cup heavy cream
  • 90 g semi-sweet chocolate pieces
  • 1 tsp vanilla extract
  • Whipped cream for decoration

Preparation:

  1. In a medium saucepan, combine the sugar, cocoa, cornstarch, and salt. Gradually whisk in the milk until fully incorporated, then add the cream. Place the saucepan over medium heat and cook, stirring constantly, until the pudding thickens and comes to a boil, about 5 minutes. Continue stirring and cooking for another 1 minute.
  2. Remove the pan from the heat and add the chocolate and vanilla. Let it sit until the chocolate melts, about 5 minutes, then gently stir until the pudding is smooth.
  3. Divide the pudding among 6 ramekins. Let cool for about 20 minutes to serve warm and soft, or cover and refrigerate for at least 30 minutes or up to 8 hours to serve chilled and set. Top each serving with whipped cream.
