Snow peas

Ingredients:

  • 1 tbsp peanut butter or grapeseed oil
  • Half a large sweet onion, such as Vidalia or Maui, sliced ​​into thick rings
  • 220 g snow peas, ends trimmed (about 4 cups)
  • 1/4 cup store-bought natural gong bao sauce
  • 2 tablespoons chopped unsalted roasted peanuts or cashews

Preparation:

  1. Heat a wok or large skillet over high heat and add oil. Add the onion and cook, stirring, until wilted, about 30 seconds. Add the snow peas and cook, stirring, until crisp-tender, about 2 more minutes.
  2. Add the sauce and cook, stirring, for about 1 minute. Transfer to a platter or large bowl, sprinkle with nuts, and serve.

    Note

    A store-bought natural sauce makes stir-fry quick and delicious. Choose a sauce with less than 400 mg of sodium per serving, such as soy sauce with ginger and shiitake mushrooms, or another low-sodium stir-fry sauce.
