Italian Herb Vinaigrette

Ingredients:

  • 1/4 cup red wine vinegar
  • 2 tablespoons Dijon mustard
  • 2 tsp dried Italian herbs
  • 3/4 cup extra-virgin olive oil

Preparation:

  1. In a small bowl, combine vinegar, mustard, dried herbs and a generous pinch of salt.
  2. Gradually whisk in the olive oil, starting with a few drops, then add the rest in a steady stream to create a smooth, slightly thick dressing. Add a couple of turns of the black pepper grinder.
