Ingredients:

  • 4 cups salad greens
  • 3/4 tbsp. giardiniera
  • 110 g of sliced ​​fresh mozzarella

Preparation:

  1. In a large bowl, combine 3/4 cup giardiniera (Italian pickled vegetables), 4 ounces shredded fresh mozzarella, 4 cups Italian mixed greens, 1/2 cup torn basil, and 2 tablespoons chopped parsley.
  2. Combine 1 tablespoon each of white wine vinegar and giardiniera brine, then slowly stir in 3 tablespoons of olive oil; drizzle the dressing over the salad and toss. Season with salt and pepper to taste.
