Apple granita with mint topcook.tomathouse.com
Ingredients:
- 0.5 cups of sugar
- 1 cup fresh mint, tightly packed
- 1 large Granny Smith apple
- Juice of 2 limes
Preparation:
- Combine sugar and 2 cups of water in a small saucepan and bring to a boil over medium heat. Cook, stirring, until the sugar dissolves, about 4 minutes. Transfer to a blender and let cool completely.
- Add the mint to a blender and blend until smooth. Strain through a fine-mesh sieve into a 20cm square stainless steel or glass baking dish. Finely grate the apple peel into the dish (you won't need the rest of the apple), then add the lime juice.
- Freeze until ice crystals begin to form around the edges, about 45 minutes. Use a fork to scrape the crystals toward the center of the pan, then continue freezing, scraping the ice every 30 minutes, until the granita is set, about 4 hours.
Avoid using aluminum cookware. It can react with acidic ingredients, imparting a metallic taste to the dessert. Use stainless steel or glass.
