Ingredients:
- 12-24 fresh blueberries
- 12 canned lychees in syrup + 5-6 tbsp syrup from the jar
- 3 tbsp. blueberry juice cocktail
- 1/3 cup freshly squeezed lime juice (about 4 limes)
- 2 cups of sparkling water
- Ice
- 3/4 cup gin (optional)
Preparation:
- Insert 1-2 blueberries, depending on their size, into the cavity of each lychee. Place on a foil-lined baking sheet and freeze for about 1 hour. Let the "eyeballs" thaw slightly before serving, making them easier to eat. In a bowl or pitcher, combine 5 tablespoons of lychee syrup, blueberry juice, and lime juice until smooth.
- Add soda water and lychee eyeballs. If the drink is a bit tart, add the remaining spoonful of syrup. Serve in tall glasses with ice, spooning the lychee eyeballs into the glasses. If making for adults, add gin before adding the soda water. Enjoy!
