Baked Sweet Potatoes with Honey Cinnamon Glaze topcook.tomathouse.com
Ingredients:
- 1.1 kg sweet potatoes (about 6 pcs.)
- 4 tbsp salted butter, melted
- 2 tablespoons of honey
- 0.5 tsp ground ancho pepper
- 0.5 tsp ground cinnamon
- 0.5 tbsp. chopped pecans
Preparation:
- Preheat oven to 200°C (400°F) and line a baking sheet with foil. Pierce the sweet potatoes all over with a knife and microwave on high power, turning occasionally, until tender, 8-12 minutes. Some potatoes bake faster than others. Check them every 2 minutes halfway through baking; they should be tender to the touch. Cut into large chunks and place on the prepared baking sheet.
- In a small bowl, combine the butter, honey, chili powder, cinnamon, and 1/4 teaspoon salt. Pour the mixture over the sweet potatoes and toss to coat. Bake until the honey butter is bubbling and the sweet potatoes are glazed, 15 minutes. Stir well. Sprinkle the sweet potatoes with chopped pecans and bake until the pecans are toasted, about 5 minutes more. Season with salt to taste and serve.
