Sweet potato poutine

Ingredients:

  • 1 package (560 g) frozen sweet potato fries
  • 1/3 cup firmly packed light brown sugar
  • 55 g butter
  • 1 tbsp. heavy cream
  • 3/4 tsp vanilla extract
  • 2 tbsp. granulated sugar
  • 0.5 tsp ground cinnamon
  • 0.5 cup mini marshmallows

Preparation:

  1. Cook the fries according to package directions. Leave the oven on.
  2. Meanwhile, in a medium saucepan, combine the brown sugar, butter, cream, vanilla, and 1/2 teaspoon salt. Bring to a boil, stirring until the sugar dissolves. Once the sauce comes to a full boil, cook for 1 minute. Remove from heat and keep warm.
  3. In a large bowl, combine granulated sugar and cinnamon. Roll the hot fries in the cinnamon sugar, coating them evenly. Place in an 8- to 9-inch ovenproof dish and sprinkle with mini marshmallows. Place the dish on a baking sheet and bake in the oven until the marshmallows are soft and starting to brown on top, about 5 minutes. Before serving, drizzle with warm brown sugar sauce.
