Mini Tostadas with Chicken and Mango topcook.tomathouse.com
Ingredients:
- 2 cups shredded cooked chicken
- 1 mango, peeled and diced (about 1 cup)
- 2 tablespoons chopped red onion
- Half a jalapeño, seeded and finely chopped (optional)
- 1 tbsp chopped fresh cilantro
- Juice of 2 limes
- 2 tbsp. l. olive oil
- 2 ripe avocados, halved and peeled
- 24 large corn tortilla chips, for serving
Preparation:
- Combine the chicken, mango, red onion, jalapeño, and cilantro in a bowl. Add half the lime juice, olive oil, and salt to taste. In another bowl, mash the avocado with the remaining lime juice and season with salt to taste.
- Spoon avocado mash onto tortilla chips, top with some chicken salad and serve.
