Ingredients:
- 4 sweet potatoes
- 1 tbsp harissa
- Zest of 1 lime
- 1 clove of garlic
Preparation:
- Slice 4 sweet potatoes into wedges; toss on a baking sheet with olive oil, salt, and black pepper to taste. Bake at 425°F (220°C), stirring once, until golden brown, 20-25 minutes.
- Combine 3 tablespoons softened butter with 1 tablespoon harissa (or other chili paste), 1 grated garlic clove, the zest of 1 lime, and a pinch of salt. Toss with sweet potatoes and sliced green onions. Season with salt to taste. Serve with lime wedges.
