Ingredients:
- 10 tbsp unsalted butter (110 g + 2 tbsp)
- 2.5 cups premium flour
- 2 and 3/4 teaspoons baking powder
- 0.5 tsp fine salt
- 3 large eggs
- 1 and 1/4 cups sugar
- 2 tsp pure vanilla extract
- 0.5 cup natural creamy peanut butter at room temperature
- 1 and 1/4 cups peanuts, roasted without oil
- 1 and 1/4 cups dark chocolate chips (about 170 g)
Preparation:
- Evenly space oven racks and preheat oven to 350°F (175°C). Line 3 baking sheets with parchment paper.
- Melt the butter over medium heat, swirling the pan occasionally. Continue heating until the butter darkens and becomes nutty, about 5 minutes. Let cool slightly.
- In a large bowl, combine the flour, baking powder, and salt. In the bowl, beat the eggs with a mixer until pale yellow, about 2 minutes. While continuing to beat, gradually add the sugar. Then slowly add the butter and vanilla extract until fully incorporated, about 30 more seconds. Add the peanut butter and mix until smooth.
- While stirring, slowly add the flour mixture to the liquid mixture in two portions. Stir until completely absorbed. Add the peanuts and chocolate chips.
- Divide the dough evenly into three portions and place each portion in the center of the baking sheet. Using slightly damp hands, shape the dough into loaves about 2 inches (5 cm) wide and 15 inches (37 cm) long. Bake until golden brown around the edges, about 25-30 minutes. To ensure even baking, rotate the baking sheets and switch them halfway through the baking time. Let the loaves cool on the baking sheets for about 10 minutes.
- Reduce the oven temperature to 160°C (325°F). Carefully transfer the loaves to a cutting board. Using a long serrated knife, slice them at a 45-degree angle into 1-cm-thick slices. Place the cookies, cut-side down, on a baking sheet.
- Bake until crisp, about 8 minutes. Flip the cookies over and bake until golden brown, about 8 more minutes. Let the biscotti cool on the baking sheets. Serve. Store cookies in a tightly sealed container for up to 3 days..
