Healthy Chocolate Chip Cookies topcook.tomathouse.com
Ingredients:
- 3/4 cup dark brown sugar
- 3/4 cup sugar
- 2 large eggs
- 0.5 cups vegetable oil
- 1 tsp vanilla extract
- 1 cup premium flour
- 1 cup whole wheat flour
- 1 teaspoon fine salt
- 3/4 tsp baking soda
- 170 g semi-sweet chocolate, chopped or granulated
- 110 g dried cranberries or cherries
Preparation:
- Position two racks evenly in the center of the oven and preheat to 375°F (190°C). If you only have one baking sheet, let it cool completely before baking the next batch.
- In a large bowl, mix the sugar, eggs, vegetable oil, and vanilla extract until smooth. In another bowl, combine the flour, salt, and baking soda. Using a wooden spoon, fold the flour mixture into the liquid mixture, being careful not to overmix. Stir in the chocolate chips and dried fruit.
- Place 1 tablespoon of dough on each prepared baking sheet. Lightly moisten your hands and roll the dough into balls. Place them on the baking sheets, spacing them about 5 cm apart.
- Bake until golden brown but still soft in the center, about 12-14 minutes, depending on how soft or crisp you like your cookies. Using a spatula, transfer the hot cookies to a wire rack to cool completely. Serve. Store cookies in a tightly sealed container for up to 3 days..
