Healthy Ricotta and Blueberry Tartlets

Ingredients:

  • 0.5 cups semi-skimmed ricotta
  • 0.5 tsp finely grated lemon zest
  • 0.5 tsp vanilla extract
  • 1 tbsp + 1 tsp apricot jam
  • 1/3 cup blueberries
  • 12 frozen mini filo pastry tartlets, thawed
  • 2 tsp pine nuts or chopped almonds

Preparation:

  1. In a small bowl, combine the ricotta, lemon zest, vanilla extract, and 1 tablespoon of apricot jam. Combine the blueberries in another small bowl with the remaining 1 teaspoon of apricot jam.
  2. Spoon ricotta into the filo pastry tartlets. Top with a few blueberries and some nuts. Tartlets can be assembled in advance and stored in the refrigerator for up to 2 hours..
