Pepperoni pizza on broccoli crust topcook.tomathouse.com
Ingredients:
- 2 packages of 300 g frozen broccoli
- 0.5 cups grated Parmesan (about 50 g) + extra for sprinkling
- 0.5 tsp dried oregano
- 1/4 tsp crushed red pepper flakes
- 2 large eggs, lightly beaten
- 1 package (220 g) of grated semi-skimmed mozzarella
- 0.5 cup store-bought pizza sauce (110 g)
- 1 cup pepperoni slices (about 60 g)
Preparation:
- Preheat oven to 200°C.
Prepare frozen broccoli according to package directions. Place in a colander, drain, and cool for 10 minutes. Set aside 1 cup of florets for the topping, finely chopping them if needed; set aside.
- Puree the remaining broccoli in a food processor, scraping down the sides of the bowl as needed. Place the broccoli, Parmesan, oregano, red pepper flakes, eggs, 3/4 cup mozzarella, and 3/4 teaspoon salt in a large bowl and mix well.
- Transfer to the prepared baking sheet and spread into an even layer. Bake until golden brown, about 20 minutes.
- Spread the pizza sauce over the crust, leaving a 2-cm border. Top with the remaining mozzarella, followed by the pepperoni and remaining broccoli florets. Bake until the mozzarella is melted and the pepperoni slices are golden brown, about 15 minutes. Sprinkle with additional Parmesan cheese and serve.
