Banana Ice Cream Sundae topcook.tomathouse.com
Ingredients:
- 2 large ripe bananas, peeled
- 1/4 cup raspberries
- 2 tsp natural maple syrup
- 1/4 cup blueberries
- 2 tsp. chopped pistachios
- 2 tsp toasted coconut flakes
- 1 tsp. chocolate in mini granules
- Greek yogurt, 2% fat, for serving
Preparation:
- Cut each banana into 6 pieces and freeze until firm, preferably overnight.
- Make banana ice cream:
Place the banana chunks in a food processor and pulse. The food processor may shake a lot at first! The bananas will look crumbly at first, then sticky, and eventually turn into a light, creamy consistency, like ice cream. Stop the processor frequently to scrape down the sides of the bowl and break up any lumps.
- Serve immediately or transfer to a container and freeze until ready to serve.
- Make a sundae:
In a small bowl, mash the raspberries with maple syrup using a fork until it forms a sauce. Place the banana ice cream in a serving dish and drizzle with the raspberry sauce.
- Add blueberries, pistachios, coconut, chocolate chips and a dollop of Greek yogurt.
