Banana Ice Cream Sundae

Ingredients:

  • 2 large ripe bananas, peeled
  • 1/4 cup raspberries
  • 2 tsp natural maple syrup
  • 1/4 cup blueberries
  • 2 tsp. chopped pistachios
  • 2 tsp toasted coconut flakes
  • 1 tsp. chocolate in mini granules
  • Greek yogurt, 2% fat, for serving

Preparation:

  1. Cut each banana into 6 pieces and freeze until firm, preferably overnight.
  2. Make banana ice cream:

    Place the banana chunks in a food processor and pulse. The food processor may shake a lot at first! The bananas will look crumbly at first, then sticky, and eventually turn into a light, creamy consistency, like ice cream. Stop the processor frequently to scrape down the sides of the bowl and break up any lumps.
  3. Serve immediately or transfer to a container and freeze until ready to serve.
  4. Make a sundae:

    In a small bowl, mash the raspberries with maple syrup using a fork until it forms a sauce. Place the banana ice cream in a serving dish and drizzle with the raspberry sauce.
  5. Add blueberries, pistachios, coconut, chocolate chips and a dollop of Greek yogurt.
