Ingredients:
Wings
- 2 kg chicken wings, cut at the joints, discard the tips
- 220 g (1 cup) unsalted butter, melted
- 3/4 cup Sriracha sauce
- Vegetable oil to grease the baking sheets
- Celery sticks, for serving, optional
Dip sauce
- 3/4 cup Asian sweet chili sauce
- 0.5 cup mayonnaise
- Juice of 1 lime
Preparation:
- In a small bowl, combine the chili sauce, mayonnaise, lime juice, and 1/2 teaspoon salt. Cover and refrigerate until ready to serve.
- Preheat oven to 220°C. Generously grease 2 rimmed baking sheets.
- In a large bowl, toss the wings with 2 teaspoons salt and freshly ground black pepper to taste and arrange them evenly in a single layer on two prepared baking sheets.
- Bake until very crisp, about 55 minutes.
Dip sauce:
In a large bowl, combine melted butter and Sriracha sauce. Transfer the baked wings to the bowl and toss to coat. Serve the buffalo wings with celery sticks.
