Festive Rum Balls

Ingredients:

  • 2 cups fine vanilla wafer cookie crumbs
  • 1.5 cups powdered sugar, divided
  • 0.5 cups walnuts, toasted and finely chopped
  • 1/4 cup + 1 tbsp dark rum
  • 1/4 cup dark corn syrup
  • 2 tbsp melted butter

Preparation:

  1. In a large bowl, combine crushed wafer cookies, 1 cup powdered sugar, walnuts, rum, corn syrup, and butter. Knead the mixture.
  2. Roll into 2.5 cm balls and roll them in the remaining powdered sugar. Place the rum balls on a baking sheet, cover with plastic wrap, and let them rest for 48 hours.
