Taco bar in lunch box

Ingredients:

  • 4 thin slices roast beef (about 80 g)
  • 4 soft wheat tortillas, 15 cm in diameter.
  • 1/3 cup grated cheddar
  • 1/4 cup quick guacamole, recipe below
  • 1/4 cup quick salsa, recipe below
  • 2 tbsp sour cream or natural yogurt (optional)
  • A small bottle of hot sauce
  • Lunch box with several compartments

    Quick salsa

  • 2 ripe tomatoes (about 450 g), halved
  • A quarter of a small red onion, cut in half
  • 1 - 2 tablespoons extra-virgin olive oil
  • 1/4 cup chopped fresh cilantro or mint leaves (optional)

    Quick Guacamole

  • 1 ripe Hass avocado, halved (pit removed)
  • 1 lime, cut in half
  • 0.5 tsp coarse salt
  • 1/4 cup diced tomatoes, mango, or seedless grapes, quartered (optional)

Preparation:

  1. Place roast beef slices on each soft tortilla, fold in half, and sprinkle with cheese. Place the tacos in the largest compartment of the lunch box. Fill the other compartments with guacamole, salsa, sour cream, and other toppings of your choice. Close the box and pack for school.
  2. Quick Salsa:


    Grate the tomatoes into a bowl, cutting right down to the skins. Discard the skins. Grate the onion and add to the tomatoes. Add olive oil. Season with salt to taste. Sprinkle with cilantro leaves or stir them in.
  3. Quick Guacamole:


    Using a spoon, scoop the avocado flesh out of the skin into a medium bowl. Squeeze the lime juice over the avocado and toss to coat evenly. Season with salt to taste. Mix with a fork, mashing until you have a chunky guacamole. Add tomatoes or fruit, if desired.
