Vegan French Toast

Ingredients:

  • 1 and 1/4 cups unsweetened almond milk
  • 0.5 cup soy yogurt
  • 2 tablespoons cornstarch
  • 2 tablespoons of sugar
  • 1 teaspoon ground cinnamon
  • 1 tsp vanilla extract
  • 4 tbsp refined coconut oil, melted
  • 1 loaf (450 g) of yesterday's Italian bread, cut into 2 cm thick slices, remove the crusts
  • Warm maple syrup, for serving

Preparation:

  1. Place the baking sheet on the oven rack and preheat the oven to 95°C.
  2. Combine almond milk, soy yogurt, cornstarch, sugar, cinnamon, and vanilla extract in a blender and blend until smooth. Pour into a casserole or glass pie dish.
  3. Heat a large nonstick frying pan over medium heat. Add 1 tablespoon coconut oil, swirling the pan to coat completely. Place 3 slices of bread in the milk-yogurt mixture, let soak for about 1 minute on each side, then carefully place the slices in the pan. Cook, without moving, until golden brown and crispy, 2-4 minutes per side (adjust the heat as needed). Serve immediately or transfer to a baking sheet in the oven to keep the French toast warm. Repeat with the remaining coconut oil, bread, and milk-yogurt mixture. Serve with maple syrup.
