Caesar Salad with Watercress topcook.tomathouse.com
Ingredients:
- 1 clove garlic, crushed
- 1 tbsp. mayonnaise
- 1 tsp anchovy paste (optional)
- 0.5 tsp Dijon mustard
- 2 tablespoons freshly squeezed lemon juice
- 3 tablespoons extra-virgin olive oil
- 1/4 cup + 2 tbsp grated Parmesan
- 340 g watercress (3 bags of 110 g), tough stems trimmed
- 0.5 cups roasted unsalted almonds, chopped
Preparation:
- In the bottom of a large salad bowl, mash the garlic with 0.5 teaspoon of salt using a fork. Add the mayonnaise, anchovy paste, and mustard.
- Add lemon juice, then olive oil. Stir in 2 tablespoons of Parmesan cheese, and season with salt and pepper to taste.
- Add the watercress to the bowl and toss to coat with the dressing.
- Sprinkle with almonds and the remaining 1/4 cup Parmesan.
