Ingredients:
- 6 ice cream cones
- 6 soft wheat tortillas, 15cm in diameter.
- 2 tbsp + 2 tsp olive oil
- 4 tbsp finely grated Parmesan
- 220 g raw sweet Italian sausage, casings removed
- 4-5 canned roasted sweet peppers, drained and diced (about 110g)
- 1 cup pizza sauce
- 1.5 cups grated whole milk mozzarella
- Red pepper flakes, for serving
- Dried oregano, for serving
- Torn fresh basil leaves, for serving
- Special equipment: heavy-duty aluminum foil
Preparation:
- Preheat oven to 190°C. Position the rack on the bottom shelf of the oven.
- Cut six 6-inch squares of heavy-duty foil and six 1-inch squares. Wrap each ice cream cone with the larger squares of foil to completely cover it, tucking in any excess. Generously spray the outside of the foil with cooking spray and set aside.
- Brush 6 tortillas on both sides with 2 tablespoons of olive oil. Sprinkle 1 teaspoon of Parmesan cheese on each side of each tortilla. Roll the tortilla into a 3-inch (7.5 cm) cone with a closed end and a 3-inch (7.5 cm) diameter tip and secure the seam with a toothpick.
- Trim the top of the cone with scissors to create a clean edge. Place the waffle cone inside the tortilla cone to hold its shape, and place it on a large baking sheet. Repeat with the remaining tortillas, butter, cheese, and cones.
- Bake for 5 minutes, then wrap the tip of each cone with small squares of foil to prevent burning. Return to the oven and bake until golden brown and crispy, another 5-7 minutes. Remove the foil tips and carefully remove the cones and toothpicks.
- Discard the toothpicks. Unwrap the waffle cones and set aside for another use. If the tortilla cones are still soft, return them empty to the oven and bake until crispy, another 1-2 minutes.
- Meanwhile, prepare the meat filling.Heat 2 teaspoons olive oil in a medium skillet over medium-high heat, then add the sausage and peppers. Cook, stirring frequently and breaking up the meat, for 1 minute. Continue cooking, undisturbed, until the sausage is browned, for another 1 minute.
- Scrape up any browned bits from the bottom of the pan and cook, stirring occasionally, until the meat is cooked through and browned, about 4 more minutes. Add the pizza sauce and heat through for 1 minute. Set aside and keep warm until ready to use.
- Wrap the top of a deep pan tightly with heavy-duty foil. Using a knife, make 6 crosswise slits in the foil, evenly spaced. When the tortilla cones are cool enough, place one in each slit.
- Sprinkle a pinch of mozzarella inside each cone. Add 1 tablespoon of sauce, then a pinch of cheese, another 1 tablespoon of sauce, and another 1 tablespoon of cheese. Bake the pizzas on the bottom rack of the oven until the cheese is melted and the sauce is heated through, about 5 minutes.
- Serve immediately, sprinkled with red pepper, oregano and basil leaves.
