Ingredients:
For the filling:
- 3 large eggs
- 1/3 cup sugar
- 8 slices diced bacon
- 1 cup corn syrup or invert syrup
- 5 tbsp melted butter
- 1 tsp vanilla extract
- 1/2 teaspoon apple cider vinegar
- 1 cup pecans or walnuts + a few for garnish
- Vanilla ice cream for decoration
For the cake base:
- 1 1/4 cups wheat flour
- 1/4 cup sugar
- Salt
- 2 tsp freshly squeezed lemon juice
- 6 tablespoons cold unsalted butter, diced, plus extra for greasing the pan
Preparation:
- Prepare the cake base: Preheat oven to 190°C. Line the bottom and sides of a 20x20 cm square pan with foil, allowing the edges to extend 2 cm above the sides. Lightly grease the foil with butter.
- In a large bowl or food processor, combine the flour, sugar, and salt. Add the chilled butter and pulse quickly until smooth.
Add lemon juice and knead until smooth. Spread the dough evenly over the bottom of the prepared baking pan and bake for 15 minutes until golden brown.
- While the cake base is baking, prepare the filling: Fry the bacon cubes until crisp. Place them on paper towels to drain off excess grease.
In a separate bowl, whisk together eggs, corn syrup, sugar, melted butter, vanilla extract and apple cider vinegar.
- Arrange pecans and crispy bacon bits on top of the pie crust and pour the egg-butter mixture over the top.
Bake until golden brown, 30-35 minutes. Remove from the oven and let cool completely, then carefully unmold the pie using foil.
- Cut the pie into squares and top each cake with a scoop of vanilla ice cream and pecans.
