Mac and cheese, American-style macaroni with cheddar topcook.tomathouse.com
Ingredients:
- 450 g of pasta, cooked until al dente (8 minutes)
- 1 tbsp. vegetable oil
- 2 tablespoons butter
- 3 tbsp. flour
- 1.5 cups of milk, whole or 2% fat
- 3 cups grated white cheddar
- 0.5 tsp nutmeg, ground or freshly grated
- 1/4 tsp ground cayenne pepper
Preparation:
- Heat a medium, deep skillet over medium heat. Add the vegetable oil and butter. Once the butter has melted, add the flour and stir. Cook gently, whisking the flour and butter until a smooth paste forms, about 3 minutes. Gradually add the milk, whisking continuously. Bring the milk to a simmer, stirring gently. Allow the sauce to thicken slightly, then stir in 2 cups of grated Cheddar cheese, handfuls at a time.
- Sprinkle the sauce with nutmeg and cayenne pepper. Taste and adjust the salt if needed. Add the cooked pasta to the cheese sauce and toss to coat completely. Transfer to a baking dish and sprinkle with the remaining cheese.
- Place the baking dish under the oven's heating element and grill the cheese.
