Linguine pasta in white sauce with clams topcook.tomathouse.com
Ingredients:
- 450 gr. dry linguine or spaghetti pasta
- 36 small clams, washed with a brush
- 1/3 cup olive oil
- 3 tbsp finely chopped garlic
- 0.5 tsp red pepper flakes
- 3/4 cup dry white wine
- 1/4 cup water
- 3 tbsp finely chopped parsley
- Grilled bread, for serving (optional)
Preparation:
- Bring a large pot of water to a boil and add generous salt. Cook the pasta until al dente (tender but still firm).
- While the pasta is cooking, prepare the clam sauce. Heat the olive oil in a large skillet over medium-low heat. Add the garlic and cook until golden brown, about 3 minutes. Add the red pepper flakes and cook for another 30 seconds.
- Add the wine and water and increase the heat to high. Add the clams, cover, and cook, shaking the pan occasionally, until all the clams have opened, about 6 minutes.
- Drain the pasta and transfer it to the clam sauce. Sprinkle with parsley and toss. Season with salt and pepper to taste.
- To fry breadPreheat a grill pan over medium heat. Brush both sides of the bread with olive oil. Cook for 1-2 minutes on each side until golden brown.
Place the dish and bread on warm plates and serve immediately.
