Chinese Smashed Cucumber Salad

Ingredients:

  • 450 g of cucumbers
  • 1 teaspoon coarse salt
  • 1 tbsp soy sauce
  • 1 tbsp. Chinese black vinegar
  • 2 tsp. dark sesame oil
  • 1 teaspoon of sugar
  • 0.5 tsp crushed red pepper flakes
  • Toasted sesame seeds and coriander leaves, for serving

Preparation:

  1. Place the cucumbers in a zip-lock plastic bag. Seal the bag and lightly crush them with the palm of your hand. Remove the cucumbers from the bag and cut into 2 cm pieces. Place in a bowl and season with salt. Toss to coat.
  2. In a medium bowl, combine the soy sauce, vinegar, sesame oil, sugar, and chili flakes. Whisk to dissolve the sugar.
  3. Add cucumbers, stir and sprinkle with toasted sesame seeds and cilantro.
