Ingredients:
- 1-2 large ripe peaches, remove the pits and cut the flesh into thin slices
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tbsp. honey
- 1 tbsp Dijon mustard
- 1 shallot, thinly sliced
- 0.5 cup candied pecans
- 110 g smoked Gouda, crumbled
- 150 g of small arugula
Preparation:
- In a jar with a lid, combine the olive oil, vinegar, honey, and mustard. Add the shallots, salt, and pepper. Seal the jar and shake to combine.The dressing can be prepared 1 day in advance and stored in the refrigerator in a jar with a lid.).
