Fried rice with bacon and eggs topcook.tomathouse.com
Ingredients:
- 4 cups of boiled rice
- 2 large eggs, beaten
- 2 tbsp. vegetable oil with a neutral smell + more if needed
- 3/4 cup diced bacon or ham
- 3/4 cup diced white onion
- 2 cloves garlic, crushed
- 1/4 cup diced carrots
- 1/4 cup sugar snap peas, thinly sliced, or seasonal vegetables
- 2 tablespoons soy sauce
- 2 tablespoons oyster sauce
- 2 green onions, chopped
Preparation:
- Heat a large skillet or wok over high heat, then add 2 tablespoons of vegetable oil and the bacon. Cook the bacon, stirring occasionally, until crisp, about 2 minutes. Add the onion, garlic, carrot, and snap peas and cook, stirring occasionally, until the vegetables begin to soften, about 1 minute.
- Add the eggs to the pan, then add the rice directly to the wet egg. Using the back of a spatula or spoon, press the rice into the egg, folding it in and repeating until the rice is completely coated and heated through. Add the soy and oyster sauce and stir to coat the rice. Season with salt to taste. Cook over high heat, stirring, until the rice is heated through, 2-4 minutes. Sprinkle with green onions and a pinch of white pepper.
