Fried potatoes with vegetables and scrambled eggs

Ingredients:

  • 1 potato tuber, mash, wash with a brush
  • 1 sweet potato, washed with a brush
  • 3 tablespoons salted butter
  • 1 cup chopped red bell pepper
  • 1 tbsp. chopped yellow zucchini
  • 1 cup chopped zucchini
  • Half a red onion, chopped
  • 4 large eggs

Preparation:

  1. Prick the potatoes several times with a fork, microwave them on high power, and cook until tender, 5-10 minutes. Carefully peel the skins off the sweet potatoes. Dice both potatoes and set aside.
  2. In a medium skillet over medium heat, melt 2 tablespoons of butter. Add the bell pepper, zucchini, squash, and onion and sauté for a few minutes. Add the diced potatoes and sweet potatoes to the vegetables and sauté until golden brown. Season with salt and pepper to taste.
  3. In a separate skillet over medium heat, melt the remaining 1 tablespoon of butter and crack in the eggs. Cook until the whites are set, 3-4 minutes.
  4. Serve vegetables with scrambled eggs on top of each serving.
