Banana bread with blueberries

Ingredients:

  • 1.5 cups premium flour + extra for dusting the pan
  • 1 teaspoon of baking soda
  • 1 teaspoon fine salt
  • 0.5 tsp baking powder
  • 0.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 cup of sugar
  • 0.5 cups vegetable oil
  • 2 large eggs, beaten
  • 2 tsp vanilla extract
  • 2 ripe bananas, peeled and mashed with a fork (3/4 cup total banana puree)
  • 1 cup (about 110 g) fresh blueberries
  • Butter to grease the bread pan

Preparation:

  1. Position a rack on the middle shelf of the oven. Preheat the oven to 350°F (175°C). Grease and flour a 9 x 5 x 3-inch loaf pan. Set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, baking powder, cinnamon, and nutmeg. In a large bowl, beat the sugar, oil, eggs, and vanilla extract until smooth. Stir in the bananas and blueberries. Add the dry ingredients and stir until evenly combined.
  3. Pour the batter into the prepared loaf pan. Bake until a tester inserted into the center comes out clean, about 1 hour. Cool for 15 minutes. Remove the banana bread from the pan and cool completely on a wire rack, about 2 hours.
