Imitation garlic mashed potatoes topcook.tomathouse.com
Ingredients:
- 1 medium head of cauliflower
- 1 tbsp cream cheese, softened
- 1/4 tbsp. grated parmesan
- 0.5 tsp chopped garlic
- 1/8 tsp dry chicken broth (can be replaced with 0.5 tsp salt)
- 1/8 tsp freshly ground black pepper
- 0.5 tsp chopped fresh or dried chives, for serving
- 3 tablespoons unsalted butter
Preparation:
- Place a pot of water over high heat.
Wash the cauliflower and cut into small pieces. Cook in boiling water for about 6 minutes or until tender. Drain thoroughly; pat the hot cauliflower dry with several layers of paper towels.
- Using an immersion blender or food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken broth powder, and pepper until almost smooth.
- Sprinkle with chives and serve hot with pats of butter.
Culinary advice Try adding roasted garlic and a little fresh rosemary for a new flavor.
