- 10 tbsp unsalted butter
- 1.5 cups premium flour
- 1 teaspoon of baking soda
- 3/4 tsp salt
- 1 cup of ultrafine sugar
- 1.5 tsp vanilla extract
- 2 large eggs, room temperature
- 0.5 cup mini chocolate chips
- 0.5 tbsp. milk chocolate granules
- 0.5 tbsp. dark chocolate granules
- Decorative sugar, for decoration
Preparation:
- Position racks in the upper and lower thirds of the oven; preheat to 350°F (175°C). Line 2 baking sheets with parchment paper.
- In a medium skillet, melt the butter over medium heat; cook, swirling the pan occasionally, until the butter is light brown, 8-10 minutes. Transfer to a large bowl and let cool to room temperature, 20 minutes.
- In a medium bowl, whisk together the flour, baking soda, and salt. Stir in the superfine sugar and vanilla extract into the brown butter. Beat in the eggs. Add the flour mixture, then all the chocolate chips.
- Place 1 tablespoon of dough onto prepared baking sheets, spacing them 7 cm apart. Sprinkle generously with decorative sugar.
- Bake, rotating the baking sheets halfway through, until the cookies are golden brown, 18-20 minutes. Let cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
