Pina Colada with fresh coconut milk

Ingredients:

    For coconut milk:

  • The flesh of one coconut, finely chopped
  • Liquid from one coconut (coconut water)

    For one serving of cocktail:

  • 1/4 cup coconut milk
  • 1/3 tbsp. pineapple juice
  • 2 tablespoons spiced rum

Preparation:

  1. Place the coconut pulp in a blender, add coconut water, and puree until almost smooth. Pour the coconut mixture into a saucepan, add 1.5 cups of water, and bring to a boil. Remove from heat and let sit for 30 minutes. Strain the mixture through a fine-mesh sieve and cool completely.
  2. Fill a shaker with ice, add coconut milk, pineapple juice, and rum. Shake thoroughly, then strain into an ice-filled glass.
  3. For a frozen version of this cocktail, blend all the cocktail ingredients with 1 cup of ice.
