Grapefruit salad with honey-mint dressing topcook.tomathouse.com
Ingredients:
- 2 white grapefruits
- 2 red grapefruits
- 2 tablespoons clover honey
- 2 tbsp finely chopped mint
Preparation:
Divide the grapefruits into segments: Cut off the top and bottom of each grapefruit, stand the fruit on its cut side, and trim away the rind, white pith, and some of the orange pith. Working over a bowl and holding the fruit in one hand, run a small knife between each segment and the membrane to loosen the segments. Collect them in a bowl. Squeeze the membranes over the bowl to extract as much juice as possible and discard. Place a sieve over a large liquid measuring cup and drain the grapefruit segments. Collect 1 cup of juice.
- Stir honey and mint into grapefruit juice. Arrange grapefruit wedges on a platter or in a shallow bowl and drizzle with the dressing.
