Baked Apple Puree with Thyme

Preparation:

Combine 2 pounds (1 kg) peeled and sliced ​​McIntosh apples, 2 tablespoons each unsweetened unfiltered apple juice and butter, 4 sprigs of thyme, and 1/4 teaspoon coarse salt in a baking dish. Cover and bake at 400°F (200°C) until soft, 30 minutes. Discard the thyme and add 2 teaspoons of apple cider vinegar; mash with a potato masher. Sprinkle with additional thyme.
