Gazpacho Salad

Ingredients:

  • 3 tomatoes, cut into wedges
  • 2 yellow bell peppers, coarsely chopped
  • 1 cucumber, sliced
  • 1/3 cup tomato juice
  • 1/4 cup extra-virgin olive oil
  • 3 tbsp sherry vinegar
  • 1 tbsp chopped fresh chives
  • 1 shallot, thinly sliced
  • Flaked sea salt

Preparation:

  1. In a large bowl, combine tomatoes, bell pepper, cucumber, tomato juice, olive oil, and sherry vinegar; season with coarse salt and black pepper.
  2. Sprinkle the salad with chives, chopped shallots and flaky sea salt.
